Shrimp Tacos | A Mealtime Favourite



This is one of my favourite meals for summer, a simple, tasty, easy to whip up recipe that always has everyone at the table in smiles. It takes only a few ingredients, a little time and before you know it dinner is ready.


Shrimp Tacos | Ingredients


Makes about 8 servings


Several small tortillas (corn or flour)

1 pound of peeled and de-veined shrimp (fresh or frozen works)

A handful of cilantro

Store bought in the bag or fresh chopped, red and green cabbage or just one, recently I used a shredded broccoli and kale salad mix kit-it worked great)

1 avocado chopped

1/2 of a large tomato chopped

1 Tbsp chili seasoning

1 Tbsp cayenne pepper

1 Tbsp smoked paprika

Fresh ground pepper

4 Tbsp oil (I use avocado)

4 Tbsp oil (I use avocado)

Store bought oasted garlic and chili aioli (or any aioli sauce of your liking)

2-3 limes





In food processor or blender add chopped avocado, tomato, one quarter slice of lime juiced salt and pepper to taste. Blend until just tiny pieces remain (leave some chunks, it shouldn't be pureed) and set aside.


In a large pan add shrimp, chili seasoning, chili pepper, paprika, pepper and oil. Cook until shrimp are pink. In meantime chop cabbage or prepare greens of choice, wash and dry cilantro sprigs, quarter limes and then place tortillas on a plate in the microwave for 1 minute (to warm). Once shrimp is cooked, prepare individual tacos in the order of: avocado mixture spread in a thin layer over half of the tortilla, shrimp, cabbage mixture, cilantro and then top with aioli. A fun way to serve this meal is to put out all of toppings on a large platter and have everyone assemble their own-perfect for a large gathering! Feel free to add additional toppings of your choice such as shredded cheese, sour cream or salsa to fit your taste.
