Sometimes I want something sweet after finishing a summer meal, but yet not the heaviness of a highly decadent "something baked" dessert. This is where I usually turn to berries in some form (an easy alternative given the varieties available this time of year). It's something we always have in the fridge and is easily paired with all sorts of flavours-it's a fool proof dessert option. And given that berries do offer some nutritional value, I feel less guilty about devouring it-bonus! This recipe is a super quick and easy way to serve berries après meal, and you don't even need to turn the oven on.
Sautéed Berries & Whipped Cream | Ingredients
4 cups of an assortment of berries (I like to use diced strawberries, whole blackberries and whole raspberries)
2 Tbsp. butter
4 Tsp. balsamic vinegar (lemon flavoured is delicious)
2 Tbsp. honey
1 large sprig of fresh thyme
2 cups heavy cream
1 Tsp. vanilla
Start by whipping cream in the bowl of an electric mixer until stiff peaks are formed-set aside. Wash the berries and set aside. Melt butter in a large pan then add berries, sugar, honey, vanilla, about half of the thyme leaves off the sprig and 2 tsp of balsamic vinegar. Sautee the berries on low heat until warm and slightly softened (about 4 minutes). Remove from heat and immediately place into individual dishes, serve with a generous dollop of whipped cream on top garnished with a few thyme leaves and a drizzle of balsamic vinegar.
