Every day our son and I walk to school to pick up our daughter in the afternoon and by the time we get home and in the door, hands washed, coats, backpack, shoes off and settled we are all due for a quick little healthy snack, especially the kids, they need something to tide them over during that in between time of school's done and dinner needs to be made. We eat dinner early, usually 4:30 or 5:00ish so while I don't want to give them something too big that in the end curbs their appetite for mealtime, I do need to feed those little monkeys (I was 100% the same as a child). This recipe for Parmesan & Chipotle Popcorn from Ina Garten's cookbook "Cooking For Jefferey" fits the bill perfectly, it's super quick to make, little hands can help with ease and it's not super filling. Our little guy and I made it just before heading out the door to pick up sister so it was waiting and ready when we walked back in.
Parmesan & Chipotle Popcorn | Ingredients
1 bag micorowave popcorn (we popped our own using a popcorn maker)
4 Tbsp. unsalted butter melted
1/2 cup finely grated Italian parmesan cheese
1/2 Tsp. chipotle chile powder
2 Tsp fleur de sel
Make popcorn according to package (we used 2 scoops of the popcorn kernels using the measuring cup that comes with our popcorn maker). Carefully pour the hot popcorn into a large bowl and immediately pour on the butter, then parmesan, chile powder, and salt. Toss well and serve hot.
