Marsha's Baking Addiction
These are so darn tasty, definitely a new favorite around our house-thank you Marsha! The fact that they do not require you to turn on an oven and literally take 20 minutes to make from start to finish just makes them all that more amazing. They are made with only 7 ingredients, and call for no added sugar-so technically they're healthy right-ha!
(I double the recipe and then freeze them in an attempt to make them last longer around our home:))
3/4 cup smooth peanut butter
1/2 cup honey
1 teaspoon vanilla extract
2 cups porridge oats
1 cup Rice Krispies
1/2 teaspoon ground cinnamon
1 cup chocolate chips
Line an 8x8-inch baking pan with parchment paper or foil, and set aside.
Stir together the oats, Rice Krispies, and cinnamon.
In a large microwaveable bowl, add the peanut butter, and honey and heat in 20 second intervals until the peanut butter is runny and can be combined easily with the honey. Stir in the vanilla.
Fold in the oats mixture until evenly coated. Use your hands if you need to. Fold in 3/4 cup (130g) of the chocolate chips. Don't worry if they melt a little against the warm mixture.
Press the mixture firmly into the prepared pan (use your hands), then press the remaining chocolate chips on top. Cover, and refrigerate for at least 2 - 3 hours before removing and cutting into bars.
